Instructions:
How to Season/ Prep. The Smoker?
- Wipe down the entire smoker with soapy water
- Rinse the smoker to wash away any dust, grease or shavings
- Let the smoker dry
- Spritz vegetable oil over the inside of the cooking chamber
- Open all the vents on the smoker and light a fire in the firebox
- Burn a fire for about 30 minutes with the vents open
- Let the fire die out and cool the smoker to use another time or use the smoker once it’s burned hot for about 30 minutes
How To Use Smoker:
- Season your smoker
- Open the air intake vent and chimney vent
- Fill a chimney starter full of charcoal briquettes and light them. Heat the briquettes until they begin to glow and ash over. This should take about 15 minutes.
- Once the briquettes are lightly ashy and hot, dump them into the firebox. If you want to add flavor to the smoke, include one or two logs of hardwood--the options include hickory, mesquite, apple, and maple. Close the lid on the firebox and cooking chamber.
- Monitor the temperature inside the cooking chamber until it gets as hot as you'd like. Most people prefer to smoke food between 225 °F (107 °C) and 275 °F (135 °C). Keep the firebox and cooking chamber doors closed while you're preheating the smoker.
- Arrange your food on the grill grate and close the lid of the cooking chamber
- Add briquettes or wood chips as needed to the firebox to maintain or increase the fire - You'll need to check the temperature and firebox every 30 minutes or so to ensure that the fire is still going.
- Reduce the temperature in the smoker, if necessary. Ensure that the vents are closed. If the temperature is still high, open the cooking chamber lid for about a minute. This will drop the temperature quickly.
- Rotate the food once an hour.
- If you're worried that your food will dry out over a long smoking session, introduce moisture into the firebox. Set a metal rack over the coals in the firebox. Fill a disposable aluminum pan with water and set the pan on the rack. The smoke will become moist before it flows into the cooking chamber.
- You’ll finish in about 6 to 8 hours. Smoking time depends on the size, cut and kind of meat you are working with.
